Granola

You can make granola for a fraction of what you pay at the market – and you can make it to your own taste. 

Here is a basic recipe and two specific recipes.

BASIC GRANOLA RECIPE
Substitute in whatever fruit, nuts, etc. you like.

4 C oats, old fashioned
1/4 tsp  salt
2 tsp  ground cinnamon
1/2 C  fruit #1
1/2 C  fruit #2
1/2 C  fruit #3
1/2 C  nuts #1 chopped or broken into small pieces
1/2 C  nuts #2 chopped or broken into small pieces
1/2 C  syrup or simple syrup (1/4 C water-1/4 C honey & 1 tsp extract)
1/4 C honey or 3 Tbs agave

Fruits:  prunes, raisins (regular/golden/currant), dried banana, dried blueberry, dried cranberry, dried cherry, dried apple, dried apricot, dried pear, etc.

Nuts:  mixed nuts, walnuts, sliced almonds, slivered almonds, pistachio, pine nuts, hazelnuts, pecans, etc.

Extracts (for simple syrup flavoring):  vanilla, almond, maple, lemon, orange, banana, cherry, etc.

In a large bowl, mix oats, salt, cinnamon and nuts.  In a small bowl, mix syrup and honey (or agave) and pour over oat mix.  Stir thoroughly.  Spread on a large baking sheet (no more than 1/2 inch thick) and bake at 300° for 30 minutes.  Stir every 10 minutes.  Add in dried fruits, mix.  Cool on a wire rack and store in the refrigerator in an airtight container.

ALMOND NUT GRANOLA
created by Spend No Money, makes 3 cups – 6 servings

2 C rolled oats
1/2 C walnuts, chopped fine
1/4 C sliced or slivered almonds, break in half
1/4 C agave
3 T water
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp almond extract
1/4 C  dried cherries (optional)

In a large bowl mix:  oats, walnuts, almonds, salt, cinnamon, & nutmeg.  In a measuring cup mix:  agave, water, & extract.  Pour liquid over oat mix, stir thoroughly.  Spread in a thin layer (no more than 1/2 inch) on a cookie sheet.
Bake at 300° for 15 min, stirring once halfway through.
Cool on a wire rack.  Cut dried cherries in smaller pieces and mix in.
Store in refrigerator in an airtight container.
Note:  Agave tends to mold in baked goods when left on the counter.

created by Spend No Money, makes 3 cups – 6 servings

2 C rolled oats
1/2 C walnuts, chopped fine
1/4 C pine nuts
1/4 C agave
3 T water
1/2 tsp salt
1 1/2 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla extract
1/4 C  dried apple slices, diced

In a large bowl mix:  oats, walnuts, pine nuts, salt, cinnamon, & nutmeg.  In a measuring cup mix:  agave, water, & extract.  Pour liquid over oat mix, stir thoroughly.  Spread in a thin layer (no more than 1/2 inch) on a cookie sheet.
Bake at 300° for 15 min, stirring once halfway through.
Cool on a wire rack.  Dice dried apple slices and mix in.
Store in refrigerator in an airtight container.
